Ingredients

  • 1 lb Atkins Ranch Ground Lamb
  • 1/2 cup pine nuts
  • 2 cloves finely chopped garlic
  • 1 cup coarsely chopped Italian parsley
  • 1 tsp ground cinnamon
  • 1 tsp ground allspice
  • 1/2 tsp ground nutmeg
  • 1 tsp ground red chili
  • 1 tsp kosher or sea salt
  • 1/2 tsp fresh ground black pepper
  • 12 skewers
  • 12 pita breads

Herb Yogurt

  • 1 cup plain, unsweetened yogurt
  • 1 clove finely chopped garlic
  • 2 Tbsp extra virgin olive oil
  • 1 tsp ground coriander seeds
  • 1 tsp ground cumin
  • 3/4 cup chopped Italian parsley
  • 1 Tbsp fresh thyme leaves
  • 1 Tbsp fresh oregano leaves
  • Salt and pepper to taste

Method

  1. Lightly toast pine nuts on low heat in a dry frying pan and coarsely chop them.
  2. Put pine nuts in a bowl, add ground lamb, herbs, spices and seasoning, and thoroughly mix all ingredients
  3. Using damp hands, firmly shape kofta into 3 ounce oblong balls and skewer them for ease of cooking.
  4. In another bowl, add yogurt and finely chopped Italian parsley, thyme and oregano leaves. Add crushed garlic, olive oil and spices. Stir to combine, then taste and adjust the seasoning.
  5. On medium high heat in frying pan, grill koftas for about 7 mins to desired doneness.
  6. Serve with pita bread & herb yogurt.
