Ingredients

  • 4 Atkins Ranch Shoulder Chops
  • 2 cloves garlic, minced
  • 1 Tbsp fresh chopped rosemary or 1 tsp dried rosemary
  • 1 teaspoon kosher or sea salt
  • 1/2 tsp ground black pepper
  • 1 Tbsp lemon zest
  • 2 Tbsp lemon juice
  • 2 Tbsp olive oil

Method

    1. Make marinade by combining garlic, rosemary, salt, pepper, lemon juice and zest, and olive oil.
    2. Pour marinade over the lamb chops, covering completely on both sides.
    3. Cover and marinate chops in fridge for minimum of 1 hour.
    4. Grill lamb chops on medium high heat on each side for approximately 5 minutes, depending on the thickness of the cut and desired doneness.
    5. Let rest for 5 minutes before serving.
