Ingredients

  • 1 lb Atkins Ranch Italian Style Lamb Meatballs
  • 1 medium red onion, cut into 1-inch stacks
  • 1 medium green bell pepper, cut into 1-inch stacks
  • 1 medium red bell pepper, cut into 1-inch stacks

Herb sauce:

  • 1 cup fresh flat leaf parsley leaves
  • 2 tsp minced fresh rosemary leaves
  • 1 juiced lemon
  • 2 cloves garlic
  • 1/4 cup extra virgin olive oil

Pair with: Italian bread

Method

  1. Add meatballs to a skewer, alternating with peppers and onions.
  2. Make dipping sauce by placing ingredients in blender. Blend until smooth. Refrigerate until serving.
  3. Preheat grill to medium high. Add skewers and grill about three minutes on each side, or until desired doneness. Rest five minutes.
  4. Serve with dipping sauce and grilled Italian bread.
