Lamb Meatball & Veggie Skewers
Ingredients
- 1 lb Atkins Ranch Italian Style Lamb Meatballs
- 1 medium red onion, cut into 1-inch stacks
- 1 medium green bell pepper, cut into 1-inch stacks
- 1 medium red bell pepper, cut into 1-inch stacks
Herb sauce:
- 1 cup fresh flat leaf parsley leaves
- 2 tsp minced fresh rosemary leaves
- 1 juiced lemon
- 2 cloves garlic
- 1/4 cup extra virgin olive oil
Pair with: Italian bread
Method
- Add meatballs to a skewer, alternating with peppers and onions.
- Make dipping sauce by placing ingredients in blender. Blend until smooth. Refrigerate until serving.
- Preheat grill to medium high. Add skewers and grill about three minutes on each side, or until desired doneness. Rest five minutes.
- Serve with dipping sauce and grilled Italian bread.
