Ingredients

  • 16 oz leftover Atkins Ranch Smoked Lamb Shoulder (approximately 1 cup)
  • 2 ciabatta rolls or preferred sandwich roll
  • 1/2 cup roasted bell peppers (jarred or freshly roasted)
  • 1/2 cup diced red onion
  • 1/4 cup fresh basil
  • 2 slices fresh mozarella

Chipotle mayo:

  • 3 Tbsp mayonaisse
  • 1 Tbsp chipotle sauce
  • Fresh ground black pepper to taste

Method

  1. Make chipotle mayo by combining ingredients and mixing thoroughly.
  2. Lightly toast rolls in toaster oven before assembling sandwich.
  3. Layer ingredients on toasted bottom roll starting with lamb, bell peppers, onion and basil, topped with slice of mozarella.
  4. Return open face sandwich to toaster oven and cook until cheese melts.
  5. Add top of roll and serve.
