Chipotle Smoked Lamb Sandwich
Ingredients
- 16 oz leftover Atkins Ranch Smoked Lamb Shoulder (approximately 1 cup)
- 2 ciabatta rolls or preferred sandwich roll
- 1/2 cup roasted bell peppers (jarred or freshly roasted)
- 1/2 cup diced red onion
- 1/4 cup fresh basil
- 2 slices fresh mozarella
Chipotle mayo:
- 3 Tbsp mayonaisse
- 1 Tbsp chipotle sauce
- Fresh ground black pepper to taste
Method
- Make chipotle mayo by combining ingredients and mixing thoroughly.
- Lightly toast rolls in toaster oven before assembling sandwich.
- Layer ingredients on toasted bottom roll starting with lamb, bell peppers, onion and basil, topped with slice of mozarella.
- Return open face sandwich to toaster oven and cook until cheese melts.
- Add top of roll and serve.
