Ingredients

  • 4 Atkins Ranch Lamb Loin Chops
  • 2 Tbsp melted butter
  • 1 Tbsp olive oil
  • 1/2 lemon, juice + zest
  • 3 cloves minced garlic
  • 1 tsp chopped fresh rosemary or 1/2 tsp dried rosemary
  • 1 Tbsp chopped fresh oregeno or 1 tsp dried oregano
  • Kosher or sea salt
  • Fresh ground black pepper
  • Red pepper flakes

Method

  1. In a bowl, combine zest, lemon juice, olive oil and melted butter. Mix thoroughly.
  2. Add garlic, rosemary, and oregano. Add salt, black pepper & red pepper flakes to taste and mix.
  3. In a large resealable bag, combine loin chops and mixture, massaging to coat meat. Marinate for 30 minutes, or overnight.
  4. Bring meat to room temperature before cooking. Preheat skillet to medium and cook chops for 3-4 minutes per side until desired doneness.
