Greek Lamb Loin Chops
Ingredients
- 4 Atkins Ranch Lamb Loin Chops
- 2 Tbsp melted butter
- 1 Tbsp olive oil
- 1/2 lemon, juice + zest
- 3 cloves minced garlic
- 1 tsp chopped fresh rosemary or 1/2 tsp dried rosemary
- 1 Tbsp chopped fresh oregeno or 1 tsp dried oregano
- Kosher or sea salt
- Fresh ground black pepper
- Red pepper flakes
Method
- In a bowl, combine zest, lemon juice, olive oil and melted butter. Mix thoroughly.
- Add garlic, rosemary, and oregano. Add salt, black pepper & red pepper flakes to taste and mix.
- In a large resealable bag, combine loin chops and mixture, massaging to coat meat. Marinate for 30 minutes, or overnight.
- Bring meat to room temperature before cooking. Preheat skillet to medium and cook chops for 3-4 minutes per side until desired doneness.
