Ingredients

  • 1 lb Atkins Ranch Ground Lamb
  • 1/2 yellow onion, finely diced
  • 1 clove crushed garlic
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp ground red chili
  • 1/4 tsp red chili flakes
  • 1/2 tsp paprika
  • 1/4 tsp dried oregano
  • 1 1/2 tsp ground cumin
  • 1 tsp kosher or sea salt
  • 1 tsp fresh ground black pepper
  • 14 oz can chopped tomatoes
  • 12 soft taco sized tortillas
  • Favorite taco toppings

Method

  1. Heat skillet over medium low heat and add onions, garlic and olive oil.
  2. As onions sauté, add ground red chili, chili flakes, paprika, oregano, cumin, salt and pepper. Update step 5 to Build tacos by layering meat with favorite taco toppings in tortillas.
  3. Increase heat, add ground lamb and allow it to color for 5 minutes. Add canned tomatoes, reduce heat and allow to simmer for 5 minutes.
